Spicy rigatoni with ’nduja and burrata
Silky tomato rigatoni with spicy ’nduja, finished with cool, creamy burrata and fresh basil.

Ingredients
- rigatoni360 g
- ’nduja90 g
- crushed tomatoes400 g
- burrata200 g
- garlic clovesthinly sliced2
- extra-virgin olive oil2 tbsp
- fresh basil1 handful
- fine saltto taste
Method

Bring a large pot of well-salted water to the boil. Cook the rigatoni until just shy of al dente.

Warm the olive oil in a wide pan. Add the garlic, then crumble in the ’nduja and cook until fragrant.

Add the tomatoes and simmer for 12 minutes. Loosen with a ladle of pasta water.

Toss the drained rigatoni through the sauce until glossy. Spoon over torn burrata and finish with basil.
